Scallops are one of my favorite shellfish!

Cook them wrong, however, and what you end up with is more like rubber than fish!  Scallops are very versatile, and you can cook them a whole variety of ways from Jamaican Jerk, to blackened to sauteed in Butter or wrapped in bacon.  Regardless of what type of food you like scallops can fit right in to the menu. Scallops are also very healthy so if you are trying to keep those New Year resolutions add scallops to the menu!

This recipe is one of the easiest ways I know of to cook scallops, in the oven.  The recipe will give you a time for cooking but be sure to check the scallops a few minutes before the cooking time is up.  Like I said overcooked equals rubber, and no matter what you put on rubber it won’t taste good!

Pesto Scallops

Ingredients

2 lb. sea scallops

4 tbsp. melted butter

1/4 tbsp sea salt

4 tbsp. lemon juice

1 Vidalia Onion , sliced thin

¼ cup Parmesan Cheese grated

Pre-made Pesto sauce

 

Instructions

Heat oven to 425°

Place Vidalia onion and 6 Tablespoons of butter in a baking pan

Place in oven 10-15  minutes or until onions are translucent

Remove pan and place scallops on top of the onions
squeeze lemon juice on top of the scallops and sprinkle with sea salt

Next take a dollop of pesto and place on each scallop

Sprinkle the Parmesan cheese on top

Place back in the oven for 10 -12 minutes or until scallops are done

This dish will come out making it’s own delicious sauce. Set the scallops on the plates and toss “sauce” with cooked pasta and serve along side your scallops.  It is so fast and delicious!
