Comfort Food: Easy Crock Pot Chicken and Noodles

Do you need a little comfort food on your plate? Then take a look at this tasty crock pot chicken and noodles recipe. You can whip up this meal in your crock pot in no time, just throw it all in and forget about it. Now THAT is my kind of cooking! Serve it up with a side of mashed potatoes and green beans and you have the makings of one comforting and hearty meal that your family will request time and time again. Here is how to get started making your own.

Crock Pot Chicken and Noodles

Ingredients:
4 boneless and skinless chicken breasts
2 cans of cream of chicken soup
1 stick of butter
42 ounces of chicken broth
1 large bag of egg noodles
Salt and pepper to taste

Directions:
1. Begin by putting your chicken breasts on the bottom of your crock pot.
2. Sprinkle them with salt and pepper.
3. Pour the cream of chicken soup over the chicken.
4. Add in your broth. There is no need to mix the two soups together. Just pour and leave them as is.
5. Add in the stick of butter. You can cut it up into smaller pieces prior to adding if you wish.
6. Sprinkle with a little more salt and pepper to taste.
7. Cook on medium to high heat for 7-8 hours. On hour 7, remove the chicken and shred it. Add your egg noodles at this time and stir the entire pot of ingredients well. Return to heat for another hour.

Frozen Family Fun: Strawberry Sunset Fruit Pop

Let’s dive into summer with some tasty fruit pops, shall we? These Strawberry Sunset Fruit Pops are so simple to make, and let me tell you that kid’s will devour them. You only need a few ingredients, and for just pennies you can make your own ice pops instead of chasing after the ice cream man or spending big bucks at the grocery store. Take a look at how we whipped up this batch in no time!

Strawberry Sunset Fruit Pops

Supplies needed:
Empty yogurt cup
Wood craft sticks
1 can of mandarin oranges
1 cup of fresh strawberries
2 cups of lemonade

Directions:
1. In a bowl, mix the mandarin oranges and lemonade. For the lemonade you can use fresh or even a simple powder mix will do.
2. Wash and chop the fresh strawberries into small chunks. Stir it into the mixture.
3. Pour the mixture into the yogurt cups. This is a such a great way to reuse yogurt cups when you are done with them.
4. Insert the wood craft stick.
5. Place the cup in the freezer and allow it to set for several hours until solid.
6. When you are ready to eat, let the cup sit at room temp for five minutes to make it easier to remove.

Frugal Friday Family Fun: Fruit Cocktail Ice Pops

You are going to love this frugal and fun family activity! Let the kiddos cool down after a hard day of play when you make these fruit cocktail ice pops! They are so easy, I mean easy, and the end result is a tasty and cheap treat that the kiddos will want to gobble up. Take a peek below at how we made a batch in just minutes and for just pennies. Yes, pennies.

Fruit Cocktail Ice Pops

Supplies needed:
1 can of fruit cocktail
1 cup of fruit juice (any)
Ice pop molds

We found all of these items at our local dollar store. This includes the ice pop molds even. You can use any fruit juice you wish. We used a powder mix with a lemonade flavor. You can pick any flavor or color that goes along with your preferences.

Directions:
In a pitcher, mix the can of fruit cocktail and cup of fruit juice. Mix it well and then pour it into the molds. Allow the molds to rest in the freezer until solid.

Did you catch how easy those directions are? Can you even handle it? I know I can! When the pops are solid just pull them out and start eating! They will be sweet and full of chunks of fruit. No two will end up the same.

Frugal Friday Fun: DIY Summer Herb Infused Oil

Hello my frugal friends! It is Friday, so let’s do something a little fun, frugal, and crafty at the same time. Today, let’s explore how we can make those fresh grown herbs last a little longer. Take a look below at how I made my own herbal infused oil, using just my own fresh grown herbs and a little olive oil. Great for marinating chicken, fish, or pork, this herbal infused oil is perfect for adding some zest to my meals while making sure none of my herbs go to waste. I can even add it to my salads if a wish. How cool is that? Take a peek at how to craft your own herbal infused oil and get the most bang out of your herb buck!

 Here is what you will need:

Assorted fresh herbs (basil, oregano, and thyme all work great)

Olive oil

Air tight container or bottle of your choice

Chalk label or paper label if you wish

Directions:

1. Snip some sprigs of your fresh herbs.

2. Rinse them well with warm water and dry them on a paper towel.

3. Gently rub the leaves of the sprigs with your fingers to help release the oils.

4. Place the entire spring in the bottle. You want 2-3 sprigs per 8 ounce bottle.

5. Allow the herb to sit for 24 hours so it can permeate the oil well and really infuse it with flavor.

To use your herbal infused oil, simply give it a good shake before use and pour it onto raw meats before cooking or fresh salads before munching. Your oil will last a few weeks as long as it is air tight and your herbs were fresh upon use.

Macaroni and Cheese the ULTIMATE Comfort Food

Mac and CheeseBBBRRRRRRRR!!!!! It’s Sure is Cold out !

This Polar Vortex is a BEAST and putting much of the country into a DEEP FREEZE!  There’s nothing that makes me want to HUNKER DOWN and Chow on some comfort food like a cold snap.  If this cold snap is inspiring you to throw together a warming, delicious and comforting meal then you GOTTA whip up some Mac and Cheese.

I call Mac and Cheese the ULTIMATE COMFORT FOOD for a couple of reasons. First, it’s pretty economical, most everyone likes it, and lastly it’s SO versatile.  You can literally make a cheese sauce out of butter, flour and some milk and ANY cheese out there.

Season that sauce with parsley, Garlic powder and Cumin and BAM Mexican Mac and Cheese.

 Throw in a pack of Ranch dressing and American Cheese and BAM Ranchy Macaroni and Cheese.

Throw in some Pepperoni, Mozzarella , Provolone and Parmesan blend cheese, Garlic powder and Italian seasoning and BAM Italian Macaroni and Cheese (add some sauce to that on top and it’s Pizza mac and cheese).

You get the picture.  Mac and Cheese is the Ultimate Comfort Food.  But to really turn it out you have to know how to make a good roux, which is the basis of the French Mother sauces, which is really just equal parts butter and  flour that you whisk like the dickens over a medium flame and you have the base for your cheese sauce .

Mac and Cheese Cheese Sauce  

You’ll Need

4 Tablespoons Butter

4 tablespoon flour

2 cups of milk

1 cup of your cheese

salt to taste

Directions

You’ll make your roux first by melting the butter and slowly whisking in flour to form a thick paste.  Add warmed milk to the pot whisking the entire time until a thick sauce forms .  Lastly, add in your cheese and keep stirring until incorporated.  Taste and adjust salt as needed.

Simple right?  Anyone can make a Cheese Sauce!  It’s the Add-ons that really make the mac and cheese something special though!
Some of my favorite add on combinations are:

  • Hard boiled egg and ham with Colby ( breakfast mac and cheese)
  • Ham and Peas with American or Swiss Cheese
  • Cooked, crumbled,sausage, pepperoni, onions, green and red peppers with Italian cheese
  • Steak’um, Swiss Cheese and Mushrooms (Philly mac and cheese)
  • Taco Beef , Roasted Poblano Peppers, Oaxacan Cheese (Chili relleno Mac and Cheese)

The possibilities are endless!  So if you need some quick and easy comfort food and want to turn your average Mac and Cheese into the ULTIMATE Mac and Cheese then use some of my favorite add ins or invent a few of your own !

Real Simple Recipe: Homemade Chicken Tenders & Spicy Mayo Dip

Not everyone realizes it, but you can whip up your own chicken tenders from scratch in the same amount of time as it takes you to preheat an oven and throw frozen ones in. Yep, it’s true!  You get tons of flavor, can control the ingredients, and just get that feel good homemade taste when you make your own tenders, but what if you are a little rusty when it comes to cooking from scratch? No worries, because below you will find the simplest recipe ever for Homemade Chicken Tenders & Spicy Mayo Dip. In less than 30 minutes you can have a tasty meal that your family will beg you for! Don’t believe me? Take a look!

Homemade Chicken Tenders & Spicy Mayo Dip

Ingredients needed:
2 pounds of boneless, skinless chicken breasts
1 cup of all purpose flour
1 cup of bread crumbs
2 eggs
1 cup of vegetable oil
1/2 cup of mayonaise
1/4 cup of hot sauce of your choice
Salt and pepper
Seasoning salt

Directions:

  1. Begin by rinsing your chicken well and cut it into tender size slices. These are about 3-4 inches in length and 2 inches in width.
  2. Give the tenders a sprinkle of salt, pepper, and seasoning salt.
  3. In a bowl, mix your two eggs and set aside. In a second bowl, mix your flour and breadcrumbs together.
  4. Place each tender in the egg wash, then in the flour and breadcrumb mix. Press it to the mix so it is well coated. You can also re-dip in the wash and re-dip in the dry mix if you wish for extra coating and crunch, but a single dip will give you great results too.
  5. Place the coated tender on a plate while you finish the remaining pieces.
  6. Heat the cup of vegetable oil in a frying pan until hot. This is where you will want to take additional precautions to be careful as splattering grease can cause burns.
  7. Place the tenders in the grease for 2-3 minutes per side. They will have a nice and golden brown look.
  8. Remove from the grease and place the tenders on a paper towel to drain.
  9. Line the tenders up on a cookie sheet and place in the oven at 400 degrees for 10-15 minutes to finish.

While your chicken is getting nice and crispy, you can prepare your spicy mayo. This is so simple! Just mix the mayonnaise and hot sauce of your choice and stir well. You can even add a small dab of mustard for some truly unique flavor if you would like.

See how easy that was? Yes it looks like a lot of steps, but they go really quick and yield you some fast results. In no time you can be enjoying some tasty chicken tenders along with some spicy mayo dip that is simply swoon worthy! Give this recipe a try and see what you can come up with!
