Thrifty Recipe – Carmel Apple Empanadas!! YUMMY!

Yummy Yummy Yummy, did I say YUMMY?  You are going to LOVE these!

I must say, I LOVE a good empanada, any kind, any flavor!  This is a super easy homemade variety using items that many of us already have in our pantries.  Every year after Halloween I end up with an abundance of apples.  We like to do the bobbing for apples game for the kids but the problem is that after the party we have a bunch of apples left over (without teeth marks of course, haha) and I try to find creative ways to use them.  Although an apple pie or cobbler is always a good choice, this empanada recipe is super easy and really YUMMY!!

Ingredients

1 can of Crescent rolls
(pillsbury was free at Publix recently)

2 apples, cored, peeled (unless you use Granny Smith) and diced

¼ cup caramel

¼ cup granulated sugar

¼ cup brown sugar

1 tsp lemon juice

¼ cup butter

2 tsp ground cinnamon

1 tbsp flour

1 egg white

2 tsp water

1. In a medium sized sauce pan combine apples, lemon juice, flour, granulated sugar, brown sugar, butter and cinnamon. Mix well and cook over medium heat for 6-10 minutes until apples are tender, stirring the entire time.

2. Remove apple mixture from heat, stir in caramel and allow the entire mixture to cool completely. Open up crescent roll canister and separate rolls.

3. Lightly flour a surface and roll each crescent roll up into a small dough ball. Use a rolling pin to roll out each dough ball into a flat disc (okay find, I used my hands and just squashed them as good as I could). Place dough rounds on greased baking trays.

4.  Scoop a spoonful of the cooked caramel apple mixture into one half of each dough round. Don’t put too much in the round so that it leaks over the sides.

5. Fold over the empty half of the dough round and pull the lip of the bottom half of dough and pinch all along the edges to seal each empanada up.

6. In a small bowl mix egg white and water. Brush the top of each caramel apple empanada with the egg white mixture. Bake caramel apple empanadas for 10 minutes at 350 F.

7. Immediately upon removing empanadas from the oven use a fork to press down all along the sealed edge of each empanada.

 

Serve and enjoy!
