Thrifty Thursday: Delicious Cheese Lasagna!!

I am so excited to share with you this recipe for HOMEMADE Cheese Lasagna!   Our friend Anna Posth-Kaysiewcz shared her recipe for this dish and the best part is that it includes ingredients bought with coupons!!  It looked so good and was such a thrifty recipe that I asked her if she would mind sharing it with all of you!  What a treat!

We have two options, homemade pasta or boxed.  She cooks from scratch and I would LOVE to try that one of these days, but my first run I will go with the boxed option.

Homemade Cheese Lasagna

Ingredients:

  • 45 oz Prego mushroom sauce (you’ll use about 3/4 of the jar)
  • 32 oz ricotta cheese (I used whole milk ricotta)
  • 1/2 cup of milk
  • 1/4 cup of Parmesan (plus extra for sprinkling on your finished meal)
  • salt & pepper to taste
  • 8oz shredded mozzarella
  • noodles (pick option 1 or 2 *requires a pasta maker with a lasagna plate)

Option 1: Cook 1 box of noodles according to directions. All shapes taste the same but ‘lasagna’ refers only to big flat noodles. Pick what you have.

Option 2: Make basic egg-noodle pasta. I’m using the recipe from the pasta maker directions which came with my KitchenAid. If you have a different pasta maker then you’ll need to follow its  instructions. These directions are for a KitchenAid with a pasta attachment. You will need:

2 3/4c of sifted all purpose flour

3/4c of liquid (3 whole eggs plus ~2-3TB of water).

(1) Combine flour and  liquid in the bowl at speed 2 with a dough hook for about 2 minutes. It will be clumpy. (2) Knead the dough by hand and form little walnut sized balls. (3) Cover and let it rest for 15 minutes. (4) Turn your mixer to speed 10. (5) Slowly feed the pieces into the hopper-it should self-feed. In the beginning it will curl up, just dump that dough back in the hopper. (6) Extrude dough of length to fit your pan. You’ll need 9 strips. Don’t cook them.

DIRECTIONS:

  •   In a bowl combine ricotta, milk, parmesan, salt and pepper
  •  Pour a little sauce into your casserole dish and spread evenly
  • Place three flat homemade noodles over it or a layer of cooked boxed noodles
  • Pour more sauce over noodles
  • Spread a 1/3 of your ricotta mixture on top of sauce
  • Layer the rest of your sauce-noodles-cheese in the same order
  • Top entire dish with mozzarella
  • Cover it with foil to bake
  • Bake at 350 for 40-45 minutes (option 1 with boxed pasta) or about an hour (option 2 with homemade pasta) until hot & bubbly.
  • Let it stand for a few minutes before cutting
  • Optional: sprinkle parmesan and/or dried basil before eating
