Thrifty Thursday – Frugal Dinner Idea!

I thought it would be fun to set aside a certain day of the week to post a specific frugal meal idea using items that we have in our stockpiles or current sales!  I will try to do this each week and would love to share some of your menu ideas as well!  I hope you enjoy this addition to the website, please let me know what you think!!

This weeks recipe is DEEEEEEELISH!!  This past week we got in on an excellent B1G1 pork chops deal at Publix and this recipe will turn that deal into a tasty but frugal dinner full of nutrients that your family will love!!  This is a quick recipe using basic items that have been included in recent sales!  My friend Jody is an excellent cook and submitted this recipe as the Thrifty Thursday Frugal Dinner Idea!  Thanks Jody!

Jody’s Delicious Italian Pork Chops with roasted Parmesan Broccoli

 

6-8 Thin Center Cut Boneless Chops

 ¾ c Italian Bread Crumbs

¾ c Grated Parmesan Cheese

½ c All Purpose Flour

2 eggs beaten with 2 Tbsp.  water

Olive Oil

Salt, Pepper, Garlic Salt to taste

Mix the Bread Crumbs, Parmesan Cheese, and seasonings into a shallow dish.  Pour flour into another shallow dish.  Begin by sprinkling your pork chop with a bit of kosher salt.  Dip your Pork chops first in flour, egg wash, and then bread crumbs. Repeat in order if you like a thick breading.  In a nonstick pan just over medium heat pour enough olive oil to just cover your pan.  Fry pork chops 3-5 min on each side till golden brown.

Roasted Parmesan Broccoli

Large Head Broccoli
(or frozen and thawed as a quick alternative)

½ c parmesan cheese

1 ½ tsp. garlic salt

salt and pepper to taste

Preheat oven to 425

Chop broccoli into small bite size pieces, drizzle with olive oil, and toss with remaining ingredients.  Spread the broccoli out onto a cookie sheet. Bake for 20-25 minutes until edges begin to brown.

Pan Fried Potato’s

6-8 Medium Red Potato’s , Cubed into bit sized pieces

2 Tbls Butter

Salt, Pepper, and Garlic Salt to taste

Boil potato’s till they  begin to become soft, about 10 minutes. Remove from  water, drain. Melt butter in nonstick pan over med/med-high heat. Add potato’s and seasonings.  Allow to brown for 3-5 minutes before turning.
