Happy Fathers Day Weekend!

It has been super hot here in Florida and I am enjoying the air conditioning for sure!   We have some family coming into town this weekend for Fathers day, so I starting looking through the items that I already had at home to make a few easy dishes that are sure to be crowd pleasers.   They looked so good that I thought I would share with all of you!  Check them out and let me know if you try any of them!

Pepperoni Pinwheels!

Don’t these look deeeelish?!  This is such an easy recipe to do and most of us will have all of the ingredients on hand since they are part of the current Publix sale or recent sales.    You are going to LOVE these tasty starters!

 

Ingredients

 1 tube crescent rolls

1 pkg shredded mozzarella cheese

1/2 pkg pepperoni slices
1/2 jar pizza sauce (optional)
Italian spices to garnish (optional)

Instructions

1. Preheat oven to 350 degrees and prepare cookie sheet with cooking spray, and set aside.

2. Unroll your crescent rolls into 4 rectangles, pinching the seams together.

3. Put a few tablespoons of pizza sauce on each rectangle, then sprinkle with cheese and pepperoni. Roll up and cut into 4’s.

4. Place your rolls onto prepped cookie sheet (or parchment paper) and bake for 10 minutes or until cheese is melted. Serve with pizza sauce and enjoy!

Crock Pot Pulled Pork Nacho’s

When I have company in town, I LOVE using my crock pot.  It makes the house smell so nice while the food is slow cooking, but also I can cook us something like this dish that will serve more than one meal.   We like to make nacho’s but you can also make pulled pork sandwiches so this will really stretch out to cover a couple of meals.   It is so easy to do and tastes so yummy.   We are a “spicy” family, but you can easily modify this recipe by eliminating the peppers if that doesn’t work for your family.

Ingredients:

4-5 lb pork butt (may be called pork shoulder)
Salt & pepper, to season
1 large sweet onion
4 chipotle peppers in adobo sauce + 2 Tablespoons sauce
1/2 cup BBQ sauce (any brand/flavor)
2 Tablespoons brown sugar
20 oz (or 2 1/2 cups) Dr. Pepper
Tortilla chips & Shredded Cheese

Directions:

1. Cut onion into quarters then separate layers into the bottom of a 5 quart (minimum size) crock pot. You will use the entire onion to cover the bottom of your pot.

2. Trim pork butt/shoulder of excess fat (or as good as you can ~ this means all the white stuff on your meat). Then cut into 4-6 large pieces, seasoning each side with salt and pepper.

3. Lay seasoned pork on top of onions, then add chipotle peppers, adobo sauce, BBQ sauce, brown sugar, and Dr. Pepper. I actually took all those ingredients and mixed them in a small bowl before hand, then covered the meat. But either way will work!

4. Cover and cook on low for 8 hours or until pork is tender enough to easily shred with a fork.

5. After fully cooked and pork is super tender, remove pork pieces from the crock pot and shred. Place into a bowl and set aside adding some of the juices from the crock pot.

6. Serve with Tortilla Chips and Shredded Cheese, and any other toppings you enjoy!

 Perfect for a pot luck, get together – you can also serve on tortillas, buns and more!

Pretty Please Cupcakes with a Cherry on top!

Pretty pretty please with a cherry on top??  That is what your kids will be saying once they try these delicious cherry filled cupcakes.   They turn out soooooo good!  if you like cherry’s like my family does, you will want to try this one for sure.   Many of us got in on the Betty Crocker Cake mix deal recently, so these should be a nice thrifty recipe to make for your family and guests!

Ingredients

 1 box of chocolate cake mix (any brand)

1 can (or 1 1/3 cup) of cherry cola or cherry dr pepper (diet works great too for lower cal option)

2 egg whites

½ c light cherry pie filling

8 oz 1/3 less fat cream cheese

1 c powdered sugar

2 T unsweetened cocoa powder

12 cherries, optional garnish (fresh or frozen, pitted and halved)

Instructions

 1. Preheat oven per directions on cake mix box, and line cupcake pan(s) with 24 cupcake liners or use cooking spray to lightly coat 24 spots.

2. Combine your cake mix, cherry cola and egg whites in a large bowl. Beat together with an electric mixer until thoroughly mixed. Pour mixture evenly into cupcake liners, filling each about 2/3 full.

3. Bake according to directions on cake mix box. Let cool completely.

4. Using small knife, cut into each cupcake at an angle to form an upside-down cone shape and remove the center. Scoop 1 teaspoon of cherry pie filling into the opening in the cupcake. Cut the tip off the “cone” and place the “lid” back into the cupcake opening. Repeat this step with each cupcake.

5. In a large bowl combine the cream cheese, cocoa powder and powdered sugar. Beat with an electric mixer until smooth and then use to frost the cupcakes. Top each cupcake with a cherry half if desired.

Only 130 calories per cupcake if you use diet cola!
