chicken roll ups

Honestly, the photo does not do this dish justice, we couldn’t seem to get a good shot, but TRUST me, this is a tasty one!   This is one of my son Cory’s ALL TIME favorite dishes that his Nana has made him since he was a little boy (minus the crispy onions on top).  Totally worth trying, the kids will love it!

Stuffed Chicken Roll-ups

Still have a refrigerator stocked with crescents? Here is another recipe using their yummy flakiness.  Simple, rich, and tasty comfort foods baked together- this is a quick weeknight meal.  To keep it a bit lighter go with reduced-fat crescents, cheese, and soup. (then throw on some extra cheese since you’ve been so good)

 INGREDIENTS:

1 cup cooked chicken (can use rotisserie or canned if necessary for quick version)

8 crescent rolls

1 ½  cups shredded cheddar

1 can condensed cream of chicken soup

1 teaspoon pepper

1 teaspoon garlic salt

½ cup of milk

½ cup crushed French fried onions

SUPER SIMPLE INSTRUCTIONS:

Preheat oven to 350°

To prepare chicken; Boil 2-3 chicken breasts  about 20 minutes until cooked thoroughly. Shred,  season with salt and pepper to taste.

Roll out crescents, fill with 1-2 Tbsp. shredded chicken, sprinkle some cheese on top.

Roll crescent up, starting from wide end.  Place in a baking pan sprayed with non-stick cooking spray, evenly spaced, seam side down.

Bake crescents in oven for 5-7 minutes until lightly browned, remove from oven.

Mix cream of chicken soup with milk and pour over crescents, top with remaining cheese, and fried onions.

Bake for an additional 20 minutes until cheese starts to bubble and brown.
