10 Things to do With Over-ripe Bananas

Okay, here is the deal, my husband and I have this ongoing dispute on how many banana’s to buy when we shop.  He INSISTS on only getting three but I like a whole bunch of bananas, three just isn’t enough.   Every time he says “that’s too many, they are going to go bad before we eat them” and I always so “no they wont, I’m getting them” (okay, fine, I can be a little hard headed).   Well, unfortunately, I am usually the one that is wrong, so I had to get super creative and find ways to use up those over-ripe bananas before he realized it and got to rib me one more round on how he was right 🙂

Bananas are high in potassium, fiber and other great nutrients which is awesome!  I used to stick my overripe bananas in the freezer, hoping to one day make banana bread. (Have you ever tried it with chocolate chips? It’s amazing!) But I never used them unless it was during the holidays, so I started thinking about what else can you do with my stock of over-ripe bananas besides make banana bread?

Here are some super easy and tasty ideas:

 

1. Make banana pancakes. Just add a bit of mashed bananas to your pancake mix. This tastes especially hardy if you use wheat flour. Top with peanut butter for an extra delicious breakfast.

 

2. Add frozen bananas to a smoothie. Keep some chopped/sliced and frozen in bags in the freezer. Bananas are great for smoothies because they taste good with just about any other fruit combination.

3. Dip frozen bananas in chocolate syrup for a refreshing frozen treat!

4. If you have a food dehydrator, make banana chips.

5. Mash them and freeze them into ice cubes. When you want to eat some ice cream, top with thawed cubes for a treat.

6. Mash them and freeze them into single servings of baby food. These are perfect for on the go moms and dads!

 

7. Add mashed bananas to a plain yellow cake mix and the frosting for it and have a great banana flavored cake.

8. Make a banana-coconut shake. Use vanilla ice cream, 1 banana and ¼ cup shredded coconut. Add a splash of milk for a delicious on-the-go treat.

9. For an extra sinful treat, batter them and fry them. Top with ice cream, whipped cream and caramel or chocolate sauce.
