Peach Cobbler Pops

MMM…MMM…  Sweet and tangy with a taste of cinnamon this cold treat is reminiscent of Grandma’s Peach Cobbler with a scoop of ice cream on top. But, the Greek yogurt gives a healthy power punch of protein, acidophilus, and calcium- so you can indulge without the guilt that a helping of the real thing would bring. Most of these items are probably already in your stockpile so go ahead and make a batch!!

1 cup diced peaches (canned or fresh)

1 cup Greek yogurt

3 Tbsps. Brown Sugar

1 tsp. vanilla

2 tsp. ground cinnamon

2 whole graham crackers

Step 1) Rough chop peaches in food processor/chopper or cut them up

Step 2) Combine Greek yogurt, brown sugar, and vanilla, set aside

Step 3) Combine cinnamon and peaches

Step 4) In food processor/chopper blend graham crackers into large crumbs or crush in a baggie

Step 5) Alternate graham cracker crumbs, yogurt mixture, then fruit mixture into popsicle mold (can be bought for $1 at dollar stores)

Step 6) Place molds in freezer for 3-4 hours.

Remove gently from cup and serve with a smile!

Makes 6 servings

ENJOY!!
