What’s for Dinner? Hubby wants my Baked Taco’s again!!
Tacos are a classic family meal that kids and adults alike. I love this easy way to add a spin on traditional tacos. Not only does it help stretch the tacos farther but ads extra flavor that is a huge hit. Although my recipe calls for ground turkey, you can easily adapt with ground beef. I have even used shredded chicken or beef as well with incredible results. Choices of vegetables to go in the mix or on top are up to you as every family likes a different combination! Enjoy this fun and easy meal.
BAKED TACOS
12 tortillas (corn or flour – corn crisps better)
1 pound ground turkey
1 can non-fat refried beans
1 small onion chopped
½ bell pepper chopped
2 teaspoons minced garlic
1 Tablespoon Cumin
1 Teaspoon Oregano
¼ cup freshly chopped Cilantro
1 small tomato diced
1 cup Shredded Cheddar Cheese
Lettuce, Tomato, Sour Cream, Salsa as garnish
Preheat oven to 350 degrees. Spray casserole with non-stick spray and set aside. In a large skillet, brown ground turkey. Once cooked through add in can of beans, onion, bell pepper, garlic, cumin, oregano and salt and pepper to taste. Cook on medium heat for another 4-5 minutes or until veggies are becoming tender and flavors are well incorporated. Stir tomato and ½ of the cilantro.
Fill tortillas with heaping spoonful of meat mixture and arrange in casserole so they are nestled together yet open topped and standing as pictured. Top each with a sprinkle of cilantro and cheese. Bake for 350 degrees for 18-20 minutes or until tortillas are becoming crunchy, cheese is melted and golden brown on top. Remove from oven and serve with garnish as desired and a side of Spanish rice.
