Cinco De May is Tuesday, May 5th!
In my house, we always like to celebrate Cinco De Mayo with a “smorgasbord” of different mexican food! It is fun to put it all together and snack on the tasty foods. This year I am looking for a super easy way to do it and was happy to see so many items on sale at Publix! I thought I would put together a quick and easy meal idea to feed the family on the cheap! PLUS, since most items are BOGO, I will have plenty left to do another nights dinner or have appetizers at a later date!!

EASY QUESADILLA RECIPE
Lay the tortillas flat on plate or wax paper. Sprinkle cheese on half of each tortilla. Fold the tortillas in half over the cheese to make a half-moon. Heat up a skillet on low heat and add approx one tablespoon of the butter into the skillet. Add the tortilla to the skillet and cook until it is lightly brown, about 2 minutes. Using a spatula, gently lift the edge so you can check. When 1 side is brown, turn the tortilla over and cook the other side until brown and the cheese is nice and melted. Use your spatula to take out of the skillet, cut and place on plates. Repeat with remaining butter and tortillas. Top them with the sour cream, salsa and guacamole!!
