BBBRRRRRRRR!!!!! It’s Sure is Cold out !
This Polar Vortex is a BEAST and putting much of the country into a DEEP FREEZE! There’s nothing that makes me want to HUNKER DOWN and Chow on some comfort food like a cold snap. If this cold snap is inspiring you to throw together a warming, delicious and comforting meal then you GOTTA whip up some Mac and Cheese.
I call Mac and Cheese the ULTIMATE COMFORT FOOD for a couple of reasons. First, it’s pretty economical, most everyone likes it, and lastly it’s SO versatile. You can literally make a cheese sauce out of butter, flour and some milk and ANY cheese out there.
Season that sauce with parsley, Garlic powder and Cumin and BAM Mexican Mac and Cheese.
Throw in a pack of Ranch dressing and American Cheese and BAM Ranchy Macaroni and Cheese.
Throw in some Pepperoni, Mozzarella , Provolone and Parmesan blend cheese, Garlic powder and Italian seasoning and BAM Italian Macaroni and Cheese (add some sauce to that on top and it’s Pizza mac and cheese).
You get the picture. Mac and Cheese is the Ultimate Comfort Food. But to really turn it out you have to know how to make a good roux, which is the basis of the French Mother sauces, which is really just equal parts butter and flour that you whisk like the dickens over a medium flame and you have the base for your cheese sauce .
Mac and Cheese Cheese Sauce
You’ll Need
4 Tablespoons Butter
4 tablespoon flour
2 cups of milk
1 cup of your cheese
salt to taste
Directions
You’ll make your roux first by melting the butter and slowly whisking in flour to form a thick paste. Add warmed milk to the pot whisking the entire time until a thick sauce forms . Lastly, add in your cheese and keep stirring until incorporated. Taste and adjust salt as needed.
Simple right? Anyone can make a Cheese Sauce! It’s the Add-ons that really make the mac and cheese something special though!
Some of my favorite add on combinations are:
- Hard boiled egg and ham with Colby ( breakfast mac and cheese)
- Ham and Peas with American or Swiss Cheese
- Cooked, crumbled,sausage, pepperoni, onions, green and red peppers with Italian cheese
- Steak’um, Swiss Cheese and Mushrooms (Philly mac and cheese)
- Taco Beef , Roasted Poblano Peppers, Oaxacan Cheese (Chili relleno Mac and Cheese)
