Homemade Chicken Tenders & Spicy Mayo Dip
Ingredients needed:
2 pounds of boneless, skinless chicken breasts
1 cup of all purpose flour
1 cup of bread crumbs
2 eggs
1 cup of vegetable oil
1/2 cup of mayonaise
1/4 cup of hot sauce of your choice
Salt and pepper
Seasoning salt
Directions:
- Begin by rinsing your chicken well and cut it into tender size slices. These are about 3-4 inches in length and 2 inches in width.
- Give the tenders a sprinkle of salt, pepper, and seasoning salt.
- In a bowl, mix your two eggs and set aside. In a second bowl, mix your flour and breadcrumbs together.
- Place each tender in the egg wash, then in the flour and breadcrumb mix. Press it to the mix so it is well coated. You can also re-dip in the wash and re-dip in the dry mix if you wish for extra coating and crunch, but a single dip will give you great results too.
- Place the coated tender on a plate while you finish the remaining pieces.
- Heat the cup of vegetable oil in a frying pan until hot. This is where you will want to take additional precautions to be careful as splattering grease can cause burns.
- Place the tenders in the grease for 2-3 minutes per side. They will have a nice and golden brown look.
- Remove from the grease and place the tenders on a paper towel to drain.
- Line the tenders up on a cookie sheet and place in the oven at 400 degrees for 10-15 minutes to finish.
While your chicken is getting nice and crispy, you can prepare your spicy mayo. This is so simple! Just mix the mayonnaise and hot sauce of your choice and stir well. You can even add a small dab of mustard for some truly unique flavor if you would like.
