Microwave Caramel S’more’s Popcorn!!
How about a delicious campfire inspired snack that you don’t have to heat your kitchen up to make? This recipe is entirely made in the microwave. That’s right, I said-Microwave. This makes a bunch and can feed a mob at your next camp in (It’s just too hot out there!)
Most of the ingredients you should have on hand already front recent sales:
16 cups popped corn
1 C brown sugar
1/4 C Karo syrup
1/2 C butter
2 C Golden Grahams
2 C Marshmallows
1-10oz package chocolate chips
Cook sugar, syrup and butter in a glass bowl in microwave on high for one minute. Stir and repeat for a total of five minutes, or until hot and bubbly.
Remove from microwave and add:
1/2 tsp. baking soda
1/2-1 tsp. vanilla
Mix until foamy. Put popped corn into a very large bowl, allowing plenty of room for mixing. Pour syrup over popcorn. Stir to coat. Pour popcorn onto large baking sheet lined with waxed paper, while still warm press 2 cups Golden Grahams, and 2 cups marshmallows into the top of popcorn. Melt chocolate chips in glass bowl in microwave for 30-45 seconds at a time, stirring each time until smooth and melted. Using a spoon drizzle chocolate all over popcorn, allow to set.
