I LOVE Pasta Salad, yes I said it! I know it’s not on my low carb diet, but it is just so fresh and tasty to me! Check out this thrifty Pasta Salad that I am making for Memorial Day using items from my stockpile or recent sales!
What’s better at a BBQ than a nice cool and delicious classic macaroni salad? Nothing is! But the calories in the traditional macaroni salad tend to be more than most of us want to eat. I’ve adapted the traditional dressing with some awesome flavors so you don’t feel like you are missing out on the traditional creamier version!
LOW FAT MACARONI SALAD:
1 pound elbow macaroni
1 medium tomato sliced
1 small bell pepper diced
1 cup fat free miracle whip
1 8oz. container plain Greek yogurt
1/4 cup white vinegar
1 tablespoon garlic powder
2 teaspoons onion powder
2 teaspoons paprika
1 teaspoon black pepper
1 teaspoon dill
2 teaspoons poppy seeds
Tools Needed: One large stockpot. Large bowl for mixing and storage. Measuring cup and measuring spoons. Utensils for mixing.
Cook pasta as directed and drain. In medium bowl, mix miracle whip, Greek yogurt, Vinegar and seasonings until thoroughly blended. Pour over cooked pasta along with diced vegetables. Stir making sure all pasta is well coated with dressing. Let cool for 2-3 hours in refrigerator.
Note: This recipe can be easily adapted with the addition of other favored vegetables. We enjoy shredded carrots and diced black olives in ours also.
